I have to quick questions.

1. Is there a way to create a separate booking for senior/veterans?
2. Is there a way to make a shuttle round round trip? For example, set it up so the user can select a ride back on a later date?

Shuttle routes work like Bus routes with multiple stops and can't have Return trips as they are usually circular with a set time for each stop. Here is a link to the documentation regarding Shuttles: https://booking.drivenot.com/en/documentation/36-shuttle-booking.
Your customers can still book in advance but it is best to book both trips as separate orders.
